Okay... so I'm working on my recipes for my production day in my quantity foods. I decide I'll practice my cheesecake recipe and bring it into work along with trying my gyro pita pockets on sunday.

So I go to the store and spend $25 on stuff for the 2 cheesecakes. Well I'm not feeling the bests, and don't think about needing the springform pan, I think I'll just cut out the making my own crust part and just buy the pie pan w/ crust already on it.

Guess what happens?! My cakes rise, me not thinking much about it, crack and look hideous. :mad: they will taste good, but look NASTY. I'm very angry. So that's what I get when I cook and can't breath. My poor cakes looks so sad. Now i have to present these to my co-workers and say, I screwed up. I know it looks nasty, but it will taste really really good.

At least I screwed up before my production day. That would result in some MAJOR point deductions. Jeez.... what a day. Now I'm off to study...

Catfish -- if you're interested I have a great cheesecake recipe that my family loves...it forms it's own crust through the process. :)

I would love the recipe~ I am just mad they look bad. Maybe I can cover them in whipped cream and no one will notice.....

It's my allergies that are acting up. It's turning into bronchitis, so I may end up in the doctors... I'm going to hold out and nebulize myself at work tomorrow. I hope that will be enough. I can't even walk that much right now without getting winded and needing to lie down to catch my breath.

I'd eat a cheesecake that TASTES good anyday over one that LOOKS good and doesn't taste good. I've never been a good baker, so all I can say is I hope you feel better soon!

Kathy -- I totally agree...I love cheesecake and I'm take it in crumbs as long as it was good.
Here is the recipe..in the event we have fellow cheesecake fans...I normally make a blueberry sauce for it by mixing fresh blueberries, OJ and a bit of sugar...low boil for a few minutes and let it set. Thickens nicely..here goes..
Step 1 ingredients:
3 - 8oz pkgs of cream cheese
4 eggs
1 cup sugar
3/4 tsp almond extract

step 2 ingredients
3/4 pint sour cream
6 Tblspn sugar
1 Tblspn vanilla

Cream cheese and eggs thoroughly. Add sugar and almond extract. (I normally beat this mixture for about 10 minutes on medium speed. Pour into springform pan (or pie dish). Bake at 325 degrees for 45-50 minutes.

Remove from oven and let stand on rack for 15 minutes. (center will go down leaving crust around edge). Mix last three ingredients and pour into cavity. Bake at same temperature 15 minutes longer. Cool on rack and chill in fridge before serving.

OK please do this for me... and don't laugh. Take you a good warm shower and then rub Vick's vapor rub on your feet and put some socks on and go to bed. You will sleep like a baby. It's an old remedy from down here and I heard it mentioned on TV too, Get some rest. I'm not sending you a bill but a good ole MaMa hug to make you feel better.

I think I'll try that. I just had to chase my cat all over the house. He broke my screen on my hermit crab tank, and I had to repair it because I don't want crabs running around my house..... let me tell you this... that was a nightmare.

anyways, I had to chase catfish because he hissed and struck at me when I went to go check to make sure he didn't cut himself. He knows better than that. Well he ran under the bed... so I had to take apart my bed grab him (check him over) and lock him in the bathroom. I do not tolerate that from my cats, and this is the first time in 6 years that he has ever thought about that. He was going into time out whether I passed out or not. So he is in time out. He's already apologized (gave me a kitty kiss and then tucked his head under my chin) but I'm still mad at him and he will be there for 20 more minutes. I have a weird relationship with that cat... I swear he used to be human.

So I'm going to go do what you said Memmey, and thanks so much for the hug:D

I still can't breath but I'm okay. The cheesecakes didn't look pretty, but they tasted great. People enjoyed them at work. I'll try your recipe this next week after I find my springform. :D
